This recipe is naturally gluten-free when using pork rind crumbs, which contain no grain or wheat. Pork rinds are available at most grocery stores in the snack aisle; check the label to ensure no fillers are present. To make ahead: coat and refrigerate the tilapia for up to 2 hours before air frying. The sauce can be made separately and reheated gently. Store leftovers in an airtight container in the refrigerator for up to 1 day; reheat gently on the stovetop over low heat to prevent curdling the cream. Our version: air fries the fish instead of pan-frying, reducing oil to 1 tbsp for brushing, makes the sauce in a saucepan rather than the cooking skillet, reduces cream to 3/4 cup for a thicker sauce, and adds cornstarch as a gluten-free thickener for a silkier texture.
