Chef's notes

Our version: rebuilt to match the Muncie Pizza King Royal Feast. It is pepperoni, sausage, mushrooms, onion, and red and green peppers on 100% provolone, with Pizza King's simple 1:1 tomato paste and water sauce (salt, a little sugar, and oregano are the only seasonings). For a shortcut, use about 1/2 cup of Don Pepino, Pastorelli, or Contadina pizza sauce. Pre-bought sausage: Tennessee Pride Mild ground pork is the closest easy match; Bob Evans or a mild Italian ground sausage also work. For extra authenticity, crush a pinch of fennel and dried dill into the browned sausage. Provolone is the signature cheese, though some franchises use a provolone and mozzarella blend. A pizza stone or steel preheated 45 minutes is essential for the crisp bottom. Cut into small squares for the classic Pizza King presentation.
