Pound the cutlets to a true 1/4-inch thickness: uneven spots will cook at different rates and the thicker areas stay pale while the thin areas overcook. Use a ruler the first time.
Oil temperature is the single biggest variable. Let the oil fully recover to 350 F between batches; a drop in temperature soaks oil into the crust instead of crisping it.
Rest the breaded cutlets on a wire rack for at least 5 minutes before frying. This allows the egg wash to set and dramatically reduces the chance of the coating sliding off in the pan.
